Dahibaigana (Dahi baigana is an Odia dish prepared from Curd and Eggplants 🍆)



  • Eggplant  – 3 (small sized)
  • Turmeric  powder- Half teaspoon
  • Cumin  powder- 1 teaspoon
  • Coriander powder- half teaspoon
  • Asafoetida – 1-1.5 teaspoon
  • Panch phoron- 1 teaspoon
  •  Red chilli- 1 tablespoon
  • Currry leaves – 8-10
  • Curd – 500 gram
  • Ginger- 1 teaspoon (grated)
  • Salt and sugar- as per taste
  • Mustard oil- 3 tablespoon

Step by Step Instructions

Step 1 :

Wash and Cut brinjals/ eggplants into thin slices.

ବାଇଗଣ କୁ ଧୋଇ ପତଳା ପତଳା କରି କାଟି ରଖନ୍ତୁ।

Step 2:

Marinate with salt and spices(red chilli),Keep it for 4 – 6 minutes

ଲୁଣ ଓ ମସଲା (ଲାଲ ଲଙ୍କା) ପକାନ୍ତୁ,ଏହାକୁ 4 – 6 ମିନିଟ୍ ଯାଏଁ ରଖନ୍ତୁ

Step 3:

Heat oil in a pan or kadai. deep fry the marinated eggplants.Once the brinjals are cooked and soft add them to the curd and mix gently once.

ଏବେ  କଡ଼େଇରେ ତେଲ ଗରମ କରନ୍ତୁ। ମ୍ୟାରିନେଟେଡ୍ ବାଇଗଣକୁ ଡିପ୍ ଫ୍ରାଏ କରନ୍ତୁ।ବାଇଗଣ ଭାଜି ହୋଇଗଲା ପରେ ଏହାକୁ ନରମ କରି ଦହିରେ ମିଶାଇ ଦିଅନ୍ତୁ ଏବଂ ଥରେ ଧିରେ ଧିରେ ମିଶାଇ ଦିଅନ୍ତୁ।

Step 4:

Then prepare tampering,by heating oil and adding phutana,green chilies and curry leaves& ginger ( bhusanga patra ).

ତା’ପରେ ତେଲ ଗରମ କରି ସେଥିରେ ହଳଦୀ ଗୁଣ୍ଡ, ହଳଦୀ ଗୁଣ୍ଡ, ଅଦା ଓ କଞ୍ଚାଲଙ୍କା ପକାଇ ଭାଜନ୍ତୁ।

Step 5:

Lastly Pour the curd and fried eggplant mixture into the tempering.

ଶେଷରେ ଦହି ଓ ଭଜା ହୋଇଥିବା ଅଣ୍ଡାର ମିଶ୍ରଣକୁ ଟ୍ୟାମ୍ପରିଂରେ ପକାନ୍ତୁ।

Step 5:

Garnish with chopped coriander leaves and serve.

ଏହାକୁ କଟା ଧନିଆ ପତ୍ରରେ ସଜାଇ ସର୍ଭ କରନ୍ତୁ।
