Panipuri, also known as golgappa or puchka, is a popular street food in India. It is a small, crispy, hollow ball made of semolina or wheat flour, which is filled with a spicy and tangy mixture of mashed potatoes, chickpeas, and tamarind chutney, and then dunked in a sweet and sour mint-flavored water called pani. For the puris:

1 cup semolina
1/2 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
Water, as needed
Oil, for frying

For the filling:

1 cup boiled and mashed potatoes
1/2 cup boiled chickpeas
1/4 cup chopped onions
2 tablespoons chopped coriander leaves
2 tablespoons tamarind chutney
1/2 teaspoon chaat masala
Salt, to taste

For the pani:

2 cups water
1/2 cup mint leaves
1/4 cup coriander leaves
1 green chilli
1/2 teaspoon roasted cumin powder
1/2 teaspoon chaat masala
2 tablespoons tamarind chutney
Salt, to taste

Step by Step Instructions

Step 1:

To make the puris, mix the semolina, all-purpose flour, baking soda, and salt in a bowl. Add enough water to make a stiff dough. Cover and let it rest for 30 minutes.

Step 2:

Divide the dough into small balls and roll them out into thin circles. Use a cookie cutter or a small bowl to cut out small circles from the dough.

Step 3:

Heat oil in a deep frying pan over medium heat. Fry the puris until they are golden brown and puffed up. Remove them from the oil and drain on paper towels.

Step 4:
To make the filling, mix the mashed potatoes, boiled chickpeas, chopped onions, coriander leaves, tamarind chutney, chaat masala, and salt in a bowl.

Step 5:

To make the pani, blend the mint leaves, coriander leaves, green chilli, roasted cumin powder, chaat masala, tamarind chutney, and salt with water in a blender until smooth.

Step 6:

To serve, poke a small hole in the top of each puri and fill it with the filling. Dip the filled puri in the pani and pop it into your mouth.
